Citrus Poppyseed Loaf Cake

On Tuesday I went to my first BBQ of the year. So of course I had to bake cake for it. I baked this cake and some Date & Banana Bread. The weather was so sunny,I burnt my legs to a crisp! And everyone agreed that of the two loaf cakes I baked, this one was the favorite. Unlike the banana bread, which was to dry & would have benefited from the addition of a fourth banana, even after baking it two days in advance, the citrus cake was still incredibly moist from the citrus syrup that is poured over it after baking.
Citrus Poppyseed Loaf Cake Recipe:
- 1 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup yogurt
- 1 1/3 cups sugar, divided
- 3 large eggs
- Zest of 1 lemons
- Zest of 1 orange
- 1/2 teaspoon vanilla extract
- 1/4 cup olive oil*
- Juice of 1 lemon
- Juice of 1 orange
- 3 tbsp poppy seeds
Preheat the oven to 180 degrees C. Grease a loaf pan. Grease and flour the pan.Sift together the flour, baking powder, 2 tbsp poppyseeds and salt into 1 bowl. In another bowl, whisk together the yogurt, 1 cup sugar, the eggs, zest, and vanilla. Slowly whisk the dry ingredients into the wet ingredients. With a rubber spatula, fold the oil into the batter, making sure it’s all incorporated. Pour the batter into the prepared pan and sprinkle the rest of the poppyseeds on top. Bake until a cake tester placed in the center of the loaf comes out clean. (35 minutes for mini loaf, 50 minutes for regular loaf)
Meanwhile, cook the lemon juice, orange juice and remaining 1/3 cup sugar in a small pan until the sugar dissolves and the mixture is clear. Set aside.
When the cake is done, allow it to cool in the pan for 10 minutes. While the cake is still warm, place it on a plate and poke holes in the top with a thin skewer. Pour the citrus-sugar mixture over the cake and allow it to soak in.
